Induction Compatible Cookware: How to Check Your Pans

How induction cooking works, the magnet test for induction-compatible cookware, which materials work, and what to look for when buying pans for induction.

Quick answer

Induction cooktops heat pans directly through magnetism, so cookware must have a magnetic base. Use the magnet test: if a fridge magnet sticks firmly to the bottom, the pan will work. Cast iron, carbon steel, enameled cast iron and most stainless steel work; aluminum, copper, glass and some stainless pans don't, unless they have a magnetic base layer. Look for the induction symbol and a flat bottom.

Induction cooking is fast, precise and efficient, but it only works with the right pans.

How induction works

An induction coil creates a magnetic field that heats the pan itself, not the cooktop. That’s why the pan must be magnetic.

The magnet test

Hold a fridge magnet to the bottom of the pan:

  • Sticks firmly: works on induction.
  • Weak or no pull: won’t work, or will heat poorly.

Materials

Material Induction?
Cast iron Yes
Enameled cast iron Yes
Carbon steel Yes
Most stainless steel (clad) Usually yes; check
Aluminum Only with a magnetic base layer
Copper Only with a magnetic base layer
Glass, ceramic No

Buying tips

  • Look for the induction symbol (a coil) or “induction compatible.”
  • Choose a flat, smooth base for good contact.
  • Match the pan base size to the cooking zone.

Using induction well

  • Heat is fast: preheat on medium and adjust.
  • Some pans hum or buzz at high power; this is normal.
  • Wipe spills promptly; the glass stays relatively cool.
  • If you have older aluminum pans, an induction interface disk works in a pinch but is less efficient.

Common questions

How do I know if a pan works on induction?

Hold a magnet to the bottom of the pan. If it sticks firmly, the pan works on induction. Many pans also show an induction symbol (a coil) on the base or packaging.

Does nonstick work on induction?

Nonstick pans work if they have a magnetic base, often a stainless steel plate bonded to the bottom. Check for the induction symbol.

Can I use cast iron on a glass induction cooktop?

Yes. Lift rather than slide heavy pans to avoid scratching the glass, and keep the bottom clean and smooth.
